Akide candy is a traditional Turkish candy. It is one of the oldest confectionery types of Turkish and Ottoman Cuisine. The word Akide comes from the Arabic word "akit" (contract, belief, commitment).
In the Ottoman Empire, the janissaries were given a meal at the ulufe ceremony. Kapikulu soldiers would also distribute hard candy if they were satisfied with the ulufe distributed. Thus, these colored candies pointed to a contract that showed the satisfaction and loyalty of the soldiers to the sultan. (meaning my contract continues)
The history of hard candy dates back to the 16th century. The secret behind its unique flavor is the slow boiling and mixing of sugar and fruit in copper pots for hours. This aromatic flavor is then poured onto marble counters and quickly kneaded by dexterous hands. This flavor, which is mixed and kneaded, is then cut using special sugar scissors and takes its final form.
